One thing I’ve missed more than anything in having to make the gluten-free switch was ramen. As a kid, ramen was always one of my go-to comfort foods for when I was sick. Since going gluten-free, I have found a few easy-to-make soups that are good, but they never quite lived up to my beloved ramen (they also tended to be far more expensive).
I found Lotus Foods on Instagram about a month ago, but had yet to see them in any of my local stores. When I finally saw them at Martin’s, I had to jump at the chance to try one. Out of the small portion of Lotus Foods’ selection that my Martin’s had available, I chose the Brown Rice & Millet Rice Ramen with Miso Soup.
You cook this soup pretty much how you would cook any packaged ramen: boil water, add noodles and seasoning packet, and cook for the amount of time designated on the package. I cooked my noodles a bit long, due to multitasking, making them slightly sticky and goopy, but that was an error on my part and not the fault of Lotus Foods. I do recommend sticking firmly to the time on the package to prevent this from happening to you, though.
The flavor of this ramen was incredible. The texture of the noodles was closer to ramen than the Thai Kitchen Instant Rice Noodle Soup that I typically get (when you cook it properly). All in all, this soup was delicious and definitely a repeat. I highly recommend it as a staple soup to keep on hand. I can’t wait to try all the other flavors they offer.
